Pancake Day is just around the corner, marking the countdown to Easter – and after a long tough winter that’s something to celebrate.
So, what exactly is Pancake Day? Traditionally it’s a time to feast and use up ingredients not eaten during the 40 days of lent such as eggs, fats and dairy. Each year, Pancake Day falls on a Tuesday, this year it’s on 16th February, with the exact date depending on when Easter is. Ash Wednesday (the day after pancake day) marks the start of lent and culminates in Easter Sunday, which falls on 4th April this year.
With lockdown still set to last a while longer, this year’s Pancake Day is the perfect opportunity to indulge and have some fun in the kitchen. If you’ve got kids at home, making pancakes and inventing fun new toppings is a great activity for keeping everyone entertained and learning some new cooking skills. A simple pancake for you to have with your favourite toppings

Combine 100g of plain four, two large eggs, 250ml of milk, 1 tbsp of oil and a pinch of salt in a bowl and whisk (leave to sit for half an hour to an hour if you’ve got time).

Melt a knob of butter or margarine in a frying pan on a medium heat until it starts to bubble.

Pour the pancake mix into the pan and cook for approximately 1 min on each side until golden (place in an oven on low heat to keep warm as you go).

Serve with your choice of toppings.
