Now that we’ve entered the winter months, why not treat yourself to something warm and comforting? Vegetable soup is something you can whip up easily at home, while making use of some of those items you’ll find in a Magic Bag from your local East of England Co-op.

 

What will I need?

300g of chopped vegetables – make use of any you get in your Magic Bag, as well as any that are hiding at the back of your fridge.

1-2 potatoes (depending on size)

1 tablespoon oil

700ml vegetable stock

 

What do I need to do?

Put your oil in a pan and fry your vegetables and potato until they’re soft.

Then, cover with the stock and simmer for 15 minutes.

Blend until smooth.

It’s as easy as that!

You can season to your preferred taste with salt and pepper. You could even add some fresh herbs or tomatoes if you received any in your Magic Bag or have any prepared in your freezer (if so, just add them to the pan frozen!).

What if I make more than I use?

This vegetable soup recipe is perfect for freezing and eating later. Place in a suitable container and keep it in the freezer for up to a month. Make sure you defrost it in advance of serving.

Or, if you’re going to eat it sooner, it’ll keep in the fridge for a few days.
