Spooky Spaghetti-Stuffed Peppers

Ingredients:
- Co-op Mixed Peppers
- 200g Co-op Dried Spaghetti
- Co-op Italian Tomato & Basil Stir in Pasta Sauce
- Co-op Olive Oil (optional, for roasting)
- Salt & pepper to taste
Instructions:
Prep the peppers:
Slice off the tops of the peppers and remove the seeds and membranes.
Using a small knife, carefully carve spooky faces into each pepper (just like you would with a mini pumpkin).
Cook the pasta:
Bring a pan of salted water to the boil and cook the spaghetti according to the packet instructions. Drain and mix with the tomato sauce.
Stuff the peppers:
Fill each pepper with the spaghetti mixture, letting some strands dangle out like wriggly worms or monster brains.
Replace the pepper tops if you'd like them to look like little pumpkin lids.
Bake
Place the stuffed peppers in a baking dish. Drizzle lightly with olive oil if desired.
Bake at 180°C (160°C fan) / Gas Mark 4 for 20–25 minutes, until the peppers are tender but still holding their shape.
Tips & Ideas:
- Add chopped mushrooms, sweetcorn or grated cheese to the filling for extra flavour and texture.
- Use green peppers for “zombie heads” or yellow ones for a colourful mix.
- Great fun for kids to help decorate the faces before baking.
