Christmas Tree Brownies

Peppermint Bark

Ingredients: 


  • 150g Co-op Irresistible Fairtrade Dark Chocolate 85%
  • 150g Co-op Salted Butter 
  • 200g Fairtrade Caster Sugar 
  • 3 Co-op British Medium Free Range Eggs
  • 100g Co-op Plain Flour 
  • 30g Dark Cocoa Powder
  • White or Rainbow Icing Kit Pen

Instructions:


1. Melt and Combine


Gently melt the butter and dark chocolate together in a bowl (either over a low heat or in a microwave). Once smooth, set this mixture aside to cool slightly.


2. Whisk Eggs and Sugar


In a separate large bowl, whisk the eggs and caster sugar together until the mixture is thick, pale, and holds a ribbon when the whisk is lifted.


3. Fold in Chocolate


Gently fold the cooled chocolate and butter mixture into the egg mixture until just combined.


4. Add Dry Ingredients


Sift the plain flour and cocoa powder over the mixture. Fold it in carefully until no streaks of flour remain, taking care not to overmix.


5. Bake


Pour the batter into a square baking tin that has been lined with parchment paper. Bake in a preheated oven at 180°C for approximately 25 minutes. The edges should be set, but the centre should still be slightly fudgy.


6. Cool and Cut


Allow the brownie to cool completely in the tin. Once cooled, turn it out, remove the paper, and cut it into triangle shapes.


7. Decorate


Decorate the brownie triangles with white icing to resemble small Christmas trees.


Tips


  • Store the finished brownies in an airtight container in the fridge for up to 2 weeks.
  • These make great festive treats for gift bags! Wrap them individually in cellophane and tie with a ribbon for a perfect edible present.
  • For a sweeter flavour, you could try substituting milk chocolate for the dark chocolate in the brownie batter.
