Broccoli & Cheese Pasta Bake

Ready in just 30 minutes, this comforting Broccoli & Cheese Pasta Bake for four features tender pasta and vibrant broccoli florets smothered in a rich, velvety cheddar cheese sauce and baked until golden and bubbling.
Ingredients:
- 300g pasta (penne or fusilli work well)
- 1 large head of broccoli, chopped into small florets
- 1 tablespoon butter
- 1 tablespoon plain flour
- 300ml semi-skimmed milk
- 100g grated cheddar cheese (plus extra for topping)
- 1 teaspoon Dijon mustard (optional)
- Salt & pepper to taste
Instructions:
Cook the pasta:
Bring a large pan of salted water to the boil. Add the pasta and cook for 2 minutes less than the packet suggests. Add the broccoli to the pot for the final 3 minutes. Drain and set aside.
Make the cheese sauce:
In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute to make a roux. Gradually whisk in the milk until smooth and thickened. Stir in the cheese and mustard (if using), and season with salt and pepper.
Combine:
Mix the drained pasta and broccoli with the cheese sauce. Pour into a baking dish and sprinkle a little extra cheese on top.
Bake:
Place under a hot grill for 5–7 minutes or in a preheated oven (200°C/180°C fan/gas mark 6) for 10–15 minutes until golden and bubbling.
Serve:
Let it sit for 2 minutes before serving. Great with a side salad or garlic bread.
