Chocolate & Rice Krispie Easter Nests
Crunchy, chocolatey and perfectly shaped for hiding mini eggs. These nests are quick, kid-friendly and seasonal.
Ingredients (Serves 6):
- 100g Salted Butter
- 100g Co-op Home Baking Pink & White Marshmallows
- 150g Rice Krispies (or other puffed rice cereal)
- 150g Co-op Irresistible 45% Cocoa Dark Chocolate, chopped
- 80g Co-op Mini Chocolate Chick Eggs
- Optional: pastel sprinkles or edible glitter
Instructions:
Prepare Your Tray
Line a baking tray with parchment paper so your nests don’t stick and are easy to lift off later.
Melt the Butter and Marshmallows
In a large saucepan over low heat, melt the butter and marshmallows together, stirring constantly until smooth and fully combined.
Mix in the Rice Krispies
Take the pan off the heat and gently fold in the Rice Krispies until every piece is coated in the marshmallow mixture.
Let the Mixture Cool
Allow the mixture to cool for a few minutes so it’s easier to handle when shaping the nests.
Shape Your Easter Nests
Take a small handful of the mixture and press it into a nest shape, pressing the centre down with your thumb to create a little “hole” for the eggs. Place each nest carefully on the lined tray.
Add a Chocolate Drizzle
Melt the chocolate separately and drizzle it over the nests for a shiny, extra-tasty finish.
Fill the Nests with Eggs
While the chocolate is still soft, place mini chocolate eggs into the centre of each nest for a festive Easter treat.
Allow the Nests to Set
Leave the nests to set at room temperature or pop them in the fridge for 20–30 minutes until firm and ready to enjoy.
Tips
- Use white chocolate for a more spring-like nest.
- Mix dried edible flowers or shredded coconut into the Rice Krispies for texture.
- Make mini bite-sized nests for an Easter egg hunt.
